A chef for nearly 20 years, Woolcott opened Aix in Denver in 2001 and became sole proprietor in 2006. Aix has earned multiple awards including “Best Restaurant" in Denver, "Best French Food," “Best Wine List," "Best Brunch," "Top Wait Staff," "25 Best Restaurants in Denver," and was listed by Zagat as one of "America's Top Restaurants."
